Abstract

Eleven samples of different commercial names of peanut butter-sugar candies
(mazapán) were analyzed for mold profiles as well as for aflatoxins. No aflatoxin was
detected. The identified mold species belong to the genera Aspergillus, Fusarium, Penicillium,
Rhizopus and, Absidia.
