Abstract

In the State of Chiapas, Mexico two methods are used for oyster mushroom substrate
preparation: alkaline immersion and steam pasteurization. The present work had the objective of
comparing the alkaline immersion and the steam pasteurization methods to an alternative method of
composting the substrate and to evaluate the yield capacity of three strains of P. ostreatus cultivated on a
substrate pasteurized by composting. The statistical analysis separated two groups with significant
differences among them (p=0.0007): Group A formed by the composting method (Biological efficiency
BE=112%, Production rate PR=1.87% and yield Y=0.16) and the steam pasteurization method
(BE=102%, PR=1.85% and Y= 0.15), and group B formed by the alkaline immersion method (BE, PR
and Y of 62%, 1.07 % and 0.10, respectively). Crop evaluation of the three strains under study showed no
difference among strains (p= 0.93).
